I could eat this everyday! YUMEEE 3 thin chicken breasts 2 tbsp tarragon salt pepper 1/4 cup Hellman's mayo 2 tbsp dijonaise 4 mini carrots 1/4 Craisons season chicken with salt pepper and tarragon cook chicken on the George Foreman Grill or bake the chicken cut chicken into small chunks cut carrots into small rounds mix all ingredients I served the salad in whole wheat pita bread. Orzo Salad
This was a great salad for my picnic today. I was pleased with the wonderful flavors this salad has.
1/4 zucchini
1/4 yellow squash
small handful small diced red onions
1 cup dry orzo
1/2 cup chicken broth
1/2 cup water
2 tsp Pampered chef Greek rub
2 tsp tarragon
1/3 cup olive oil
1 whole lemon
use broth and water to cook the orzo
while the orzo is cooking small dice the veg
mix all ingredients and squeeze lemon juice over the salad
add oil
MIX
serve warm

Hawaiian stirfry
Yes I know Hawaiian and stirfry do not really go together but ahhhhhhhhh it tastes oh so good! You can also make this on a kebab which was my original plan but Sophia decided she want stirfry instead.
Here it goes:
2 sirloin steaks
8 peeled and deveined shrimp
4-8 large scallops
1 small red onion chunked into quarters
1 cup of large pineapple chunks (I bought a wawa pineapple cup but wegmans also sells large chunks)
1 can petite diced tomatoes with liquid 1/2 can chicken stock
1 bell pepper chunked
2 tblsp garlic powder
2 tbsp onion powder
2 tbsp pepper
2 tbsp parsley
2 tbsp Italian seasoning
2 tbsp lemon zest
1 tbsp sea salt
2-6 turns of a pan of olive oil
Mix all spices in a small bowl including the lemon zest
Trim fat from sirloin and Cut the sirloin into 1 inch square chunks
I laid out all my ingredients on a cookie sheet then sprinkle all the proteins and veg and fruit with 1/2 the spice mix Preheat a large pot with 2 turns of olive oil Add the sirloin with spiced side down when all pieces are in the pot, spice the other side, add another turn or two of oil as needed.
Cook to desired temp. I like well done so I left me meat in the pot. If you like it less cooked then remove from the pot and set aside
Add the onions and peppers, cook about a minute then add pineapple. ( add another turn of oil if needed)
Push fruit and veg to side of pan and Add the shrimp and scallops to pan.
Cook shrimp until opaque and scallops until the are lightly golden brown on each side
Add liquid from can of tomatoes to deglaze pan
Add chicken stock
Add beef back to pot Stir and simmer for five minutes
I served this over rice pilaf.
Should you want to kebab them instead of stirfry---
Soak wooden skewers in water over night so they don't burn on the grill or in the oven
Mix all ingredients in a large bowl or ziplock Baggie and marinate in the fridge overnight
Skewer ingredients and grill or bake
Serves 4 people

spinach artichoke bread
Dough --makes 1 medium size loaf
1 1/2 cups flour
2 tsp honey
1 cup water
Put flour in food processor, add honey, STREAM in water until it forms a ball of dough.
Put dough into fridge for at least 30 mins.
Filling
1/2 large can or one small can artichoke hearts drained
5-6 oz fresh spinach
2 tbsp chopped garlic
1/2 tsp crushed red pepper or one small serrano chili
1/4 cup chopped walnuts
olive oil
Add one turn of the pan of oil
add all ingredients and saute until spinach is deep green color
cool
Roll out dough to 1/8 inch thick and 6-8 inches wide
place in pan or on cookie sheet
put filling across the entire dough
put 1/2 cup parmesan cheese over the filling (you can also add Mozzarella if you want)
roll from the top like a jelly roll
make two small slits in top of dough
bake about 60 mins or until dough is golden brown
MAYO DIP
2tbsp mayo
2 tbsp balsamic vinegar
Mix and dip!

cream of chicken
OMG this was SOOOOOOO delicious
I adapted this from a Kraft recipe
1 lb of chicken breast cubed
1/4 cup flour
salt
pepper
2 tbs thyme
olive oil
1 small can of chicken broth
1/2 pkg of reduced fat philadelphia cream cheese
pour two turns of the pan of oil
salt and pepper flour and chicken
dredge chicken in flour and brown cubes
remove chicken
add can of broth and deglaze pan with whisk
reduce heat to simmer
salt pepper and add thyme
add cream cheese and whisk in
add chicken back in to liquid
simmer for 10-15 mins
serve over brown rice

tip of the day....
I know when I buy fresh herbs, I can never use them in time without having to throw them away.
Garlic sits in the fridge until it is usually dried out and gets thrown away.
Thanks to Aaron McCargo know I know ( and in turn --YOU know) what to do with that garlic!
chop it and put into a jar with olive oil and refrigerate. It will stay good for a longer period of time!
