spinach artichoke bread

Dough --makes 1 medium size loaf

1 1/2 cups flour
2 tsp honey
1 cup water

Put flour in food processor, add honey, STREAM in water until it forms a ball of dough.

Put dough into fridge for at least 30 mins.

Filling

1/2 large can or one small can artichoke hearts drained
5-6 oz fresh spinach
2 tbsp chopped garlic
1/2 tsp crushed red pepper or one small serrano chili
1/4 cup chopped walnuts
olive oil

Add one turn of the pan of oil
add all ingredients and saute until spinach is deep green color

cool

Roll out dough to 1/8 inch thick and 6-8 inches wide

place in pan or on cookie sheet

put filling across the entire dough

put 1/2 cup parmesan cheese over the filling (you can also add Mozzarella if you want)

roll from the top like a jelly roll

make two small slits in top of dough

bake about 60 mins or until dough is golden brown


MAYO DIP

2tbsp mayo
2 tbsp balsamic vinegar

Mix and dip!

cream of chicken

OMG this was SOOOOOOO delicious

I adapted this from a Kraft recipe

1 lb of chicken breast cubed
1/4 cup flour
salt
pepper
2 tbs thyme
olive oil
1 small can of chicken broth
1/2 pkg of reduced fat philadelphia cream cheese


pour two turns of the pan of oil
salt and pepper flour and chicken
dredge chicken in flour and brown cubes
remove chicken
add can of broth and deglaze pan with whisk
reduce heat to simmer
salt pepper and add thyme
add cream cheese and whisk in
add chicken back in to liquid
simmer for 10-15 mins

serve over brown rice

tip of the day....

I know when I buy fresh herbs, I can never use them in time without having to throw them away.

Garlic sits in the fridge until it is usually dried out and gets thrown away.

Thanks to Aaron McCargo know I know ( and in turn --YOU know) what to do with that garlic!

chop it and put into a jar with olive oil and refrigerate. It will stay good for a longer period of time!

Happy Chinese New Year pot stickers

1 pkg wonton wrappers
1 phg crumbled feta
1 can of tiny shrimp or use fresh shrimp and cut it into small pieces
salt
pepper
1 tbsp chopped garlic
2=3 finely diced sundried tomoatoes

mix ingredients together in bowl

wet the edges of the wonton wrapper
put one tsp of filling in middle
fold wrapper over and press edges closed.

in a pan add 3 tbsp oil and 2 tbsp water

place wontons in pan and cover

check in 2 mins.

bottom should be crispy from the oil and top should be soft from the steam.

serve with low sodium soy sauce with diced scallions in it

Dip night

I am not the traditional mom that says we always need to have a meat and potato meal. In summer we like banana splits for dinner on occasion and chicken for dessert. ;). We also LOVE dip night.

Tonight was dip night and here are the dips I came up with.....

Cream cheese avocado tomato dip
Beef salsa
Guacamole
Buffalo chicken dip
Spinach dip
Garlic hummus

Berry balsamic vinegarette for salad


I bought a new food processor today since the old one died last week and had a blast making stuff.

Cream cheese avocado dip

1 pack cream cheese (Philadelphia)
1 avocado
1/2cup sundriedTomatoes

Put into food processor and blend until smooth



Beef Salsa

1 lb ground beef
1 small jar of salsa (hot medium or mild)
1 can cream of mushroom soup

brown the ground beef
add salsa
add soup

Mix simmer

Serve warm (I have a mini crock that I keep it warm in so people can just take what they want and it is still warm for the next person)



Guacamole

Buffalo Chicken Dip

2 cans of chicken breast meat (near the tuna in the grocery store)
1/4-1/2 cup franks hot sauce (depends on how heated you like it)
2 celery ribs
1/8 onion
1 cup bleu cheese


Mix all ingredients except chicken in food processor until you have small chunks
Move into serving bowl
Fold chicken into mixture.

Can serve hot or cold just heat in microwave


Spinach dip


1 lb fresh spinach
2tbsp sour cream
2tbsp mayo
2 tbsp Chobani PLAIN yogurt
2 tbsp Thyme

put all in food processor and blend until smooth

Garlic Hummus

1 can garbanzo beans
2 caps of lemon juice or 1 whole lemon juiced
salt
pepper
2 tbsp fresh garlic or garlic powder
1- 1 1/2 cups olive oil


Put all ingredients in the food processor and stream in olive oil until the hummus is a smooth consistency

Berry Balsamic Vinegarette

5 strawberries
2-3 tbsp garlic
2-3 tbsp italian seasoning
salt
pepper
1-1 1/2 cups olive oil
1/4-1/2 cup balsamic vinegar

Put strawberries and seasonings in food processor
stream in oil
stream in balsamic

Taste and adjust seasoning to taste

YUMEEE

Tip of the day.....

Thanks to chef mccargo from the food network for this.....



Add a little sweet treat to your salad.....

Make candied nuts.

Boil 2 cups of water with 1 cup of slenda ( or sugar)

Add nuts - I used cashews and walnuts

Boil about 10-15 mins

Strain nuts

Put into a baking dish and bake on 250 for 15 mins
